Giardinera brings to mind an image of an Italian mother, artfully pickling vegetables from the garden to use as an antipaso or salad. As with any great food, Americans, in this case, Chicagoans, over several generations have found "hot giardinera" and its less spicy cousin, "mild giardinera" to be so delicious and versatile, that it is gradually moving from a Chicago staple on Italian Beef sandwiches, to a nationwide essential for pizza parlors, hot dog stands and even gourmet fine dining -- it's that good! Muffuletta salad was originally made famous in New Orleans as a muffuletta sandwich. It is similar to giardiniera with the main focal point being olives. We use two different types of olives: sliced green and sliced black (along with a unique blend of other vegetables). Our muffuletta is comprised of 70% olives. Actually, our muffuletta salad has won multiple awards at international food shows and competitions. Muffuletta salad is excellent on anything and everything.
